Vegan Stuffing

Ingredients


1 Pinch Salt
1 Pinch Pepper
1/2 Large Baked sweet potato - sliced
1 Medium Eggs
1/2 Cup Microgreens of your choice (Arugula, Spinach or sunflower for some ideas?)
1 Medium Optional - Add in avocado if you'd like!

Instructions


  1.  Place 3/4 of the greens on a plate and, lightly drizzle with olive oil and a pinch of salt.
  2.  Heat the skillet or griddle to moderate heat.
  3.  Add olive oil, and then place the sweet potato slices into the pan.
  4.  Season with salt and pepper.
  5.  Cook until the bottom begins to brown, then flip.
  6.  Take the sweet potato slices out of the skillet and arrange them on top of the pre-cooked greens.
  7.  Crack two eggs into the skillet, and season them with a little salt and pepper.
  8.  Add the eggs to the cooked sweet potato slices on top.
  9.  Garnish the dish with the microgreens.
