Vegan Stuffing

Ingredients


1 Pound Sweet Potatoes, cubed
1/4 Teaspoon Salt
1/4 Large Yellow Onion, Diced
1 Tablespoon Extra-Virgin Olive Oil
1/2 Teaspoon Ground Coriander
1 Garlic Clove Minced
2 Large Eggs
1 Clove Garlic, minced
1 Handful Broccoli Microgreens
1 Tablespoon Toasted Pepitas
1 Teaspoon Red Pepper Flakes

Instructions


  1. Heat an 8″ or 10″ skillet.
  2. Add the onions and garlic should be added after the olive oil.
  3. Cook for 5 minutes, or until the onion is soft.
  4. Add the sweet potatoes and simmer, turning regularly, for 14 minutes, or until golden and soft.
  5. Simmer for another minute after adding the spices and salt.
  6. Make two wells in the sweet potatoes. Add the eggs and cook until the egg whites are set, around 10 to 12 minutes.
  7. Before serving, top the egg skillet with red pepper flakes, toasted pepitas, and microgreens.
