Vegan Stuffing

Ingredients


2 Large Eggs, beaten
1 1/2 Cups Raw Spinach
1 Tablespoon Almond Oil
1/3 Cup Tomatoes and Onion Salsa
1 Handful Cilantro Microgreens

Instructions


  1. Melt almond oil in the frying pan.
  2. Add spinach, and eggs to the pan.
  3. Flip once the egg sets around the edge.
  4. Add the salsa on top.
  5. Move to a plate and garnish with cilantro microgreens.
