Vegan Stuffing

Ingredients


1 32 ounce Salmon filet
1 Medium Lemon, thinly sliced
1 Tablespoons Capers
1 Pinch Salt
1 Pinch Pepper
1 Tablespoon Fresh thyme
1 Teaspoon Olive oil
1 Handful Dill Microgreens (or Pea Microgreens)

Instructions


  1.  Line a rimmed baking sheet with parchment paper and place salmon, skin side down, on the prepared baking sheet.
  2.  Season salmon with salt and pepper.
  3.  Arrange capers on the salmon, and top with sliced lemon and thyme.
  4.  Place the baking sheet in a cold oven, then turn the heat to 400 degrees F.
  5.  Bake for 25 minutes.
  6.  Serve immediately topped with the dill microgreens. ( Pea microgreens are also a great garnish here!)
