Vegan Stuffing

Ingredients


2 Cups Radish microgreens
1 Cup Grated parmesan cheese
1/3 Cup olive oil extra virgin
1/3 Cup Sunflower seeds
4 Cloves Garlic
4 Large Skinless chicken breasts, thighs, or legs

Instructions


  1.  Heat oven to 425 degrees.
  2.  Lightly coat the baking sheet with EVOO.
  3.  Combine radish microgreens, EVOO, and cheese in a blender.
  4.  Add in garlic and sunflower seeds. Pulse well.
  5.  Wash chicken and pat dry.
  6.  Arrange chicken on a pan.
  7.  Spread pesto over each piece of chicken.
  8.  Bake for 8 minutes and remove from oven.
  9.  Flip chicken and top with pesto.
  10.  Bake for 10 minutes.
