Vegan Stuffing

Ingredients


2 Teaspoons Almond oil
1/2 Cup Onion, thinly sliced
1 1/2 Pounds Peeled and Deveined Shrimp
1/2 Medium Red Bell Pepper, seeded and sliced
1 Medium Mango, peeled, pitted, and sliced
8 Ounces Pineapple chunks
1 Cup Coconut Milk
1 Tablespoon Red Curry Paste
2 Tablespoons Fish Sauce
1 Handful Cilantro microgreens

Instructions


  1.  In a skillet, melt a teaspoon of almond oil and sauté the onion for 4 minutes.
  2.  Push the onion to the edge of the pan.
  3.  Add the remaining oil and the deveined shrimp; sauté for 2 minutes on each side.
  4.  Cook for 3 minutes after adding the paprika.
  5.  Add the rest of the ingredients, and cook for 5 minutes.
  6.  Garnish with cilantro microgreens and serve.
