Vegan Stuffing

Ingredients


2 Medium Turkey Breasts
1 Cup Mushrooms, Chopped
1/2 Onion Chop half an onion
2 Tablespoons Extra virgin olive oil
1/2 Cup Thinly sliced fresh basil
1 Pinch Salt
1 Pinch Pepper
1 Pint Cherry Tomatoes
Drops Stevia or Monk Fruit
1 Small Handful Parsley Microgreens, for garnish

Instructions


  1. Preheat the oven to 400 degrees F.
  2.  Place the tomatoes on a sheet pan and toss with olive oil, stevia, salt, and pepper.
  3.  Bake for 17 minutes until soft.
  4.  Melt one tablespoon of olive oil in a pan over low heat.
  5.  Add the onions and mushrooms and cook for 12 minutes.
  6.  Season the turkey with salt and pepper and then place it in the pan.
  7.  Simmer for 15 minutes.
  8.  To assemble, divide the tomatoes between two plates.
  9.  Place turkey breast on each plate and top with the onions, mushrooms, pan drippings, and parsley microgreens.
