36 Small Cherry Tomatoes, bottoms cut off
1 Cup Quinoa, cooked
2 Tablespoons Cold-pressed olive oil
1 1/2 Cups Finely chopped snow peas
1 Hnadful Cilantro microgreens
2 Tablespoons Lemon juice
4 Medium Scallions, chopped

Instructions


  1. In a microwave-safe bowl, steam the snow peas for about 1 minute with a splash of water.
  2.  In a bowl, combine the cold-pressed olive oil, cilantro microgreens, and lemon juice; leave aside.
  3.  Mix the cooked quinoa, snow peas, and lemon juice.
  4.  Drizzle the olive oil-microgreens mixture over the top.
  5.  Top with the scallions.
