Vegan Stuffing

Ingredients


1 Handful Mixed Microgreens
1 Small Gem lettuce, base removed, leaves separated and washed
2 8oz Sirloin steaks
2 Tablespoons Olive oil
1 Tablespoon Balsamic vinegar
1 Pinch Salt
1 Pinch Black ground pepper

Instructions


  1.  Season the steaks with salt and freshly ground black pepper.
  2.  Cook the steaks for 3–4 minutes on each side in a griddle pan over high heat.
  3.  Prepare the salad in the meantime. Place the gem lettuce leaves in a bowl.
  4.  Snip the three punnets of microgreens and toss them together in the bowl.
  5.  Drizzle the steaks with olive oil and balsamic vinegar and serve on top of the salad.
