Vegan Stuffing

Ingredients


3 Large Bell peppers, sliced into strips
1/4 Teaspoon Cumin
1 Teaspoon Fine sea salt
3 Tablespoons Olive oil
1 Tablespoon Chili powder
2 Cups Cooked chickpeas
1/2 Teaspoon Garlic powder
1 Medium Yellow onion, sliced into strips
8 Large Corn tortillas
1 Handful Fresh cilantro microgreens
1 Tablespoon Hot sauce

Instructions


  1.  Preheat the oven to 450 degrees.
  2.  Arrange the pepper and onion strips onto a lined baking sheet along with the chickpeas.
  3.  Drizzle with olive oil and then sprinkle with chili powder, garlic powder, cumin, and salt.
  4.  Roast for 20 minutes, stirring regularly.
  5.  Serve with corn tortillas, fresh cilantro microgreens, and hot sauce.
