Vegan Stuffing

Ingredients


4 Ounces Package of pancetta
1 Cup Fresh peas
3 Cups Pea shoot Microgreens
1/2 Pound Pasta, cooked
3 Tablespoons Freshly grated parmesan cheese

Instructions


  1.  In a heavy pan, melt the butter over moderate heat.
  2.  Cook the pancetta for 4 minutes.
  3.  Add the peas and simmer for another 3 minutes, or until heated through.
  4.  Add the pea shoot microgreens and heat for a further minute before combining everything with the pasta.
  5.  Top with freshly grated parmesan cheese.
