Vegan Stuffing

Ingredients


1 Large Butternut squash, peeled, halved, seeded, and sliced into rounds
1 Pound Ground turkey
8 Ounces Chopped spinach
2 Large Scallions, finely chopped
1 Medium Clove garlic, minced
1 Pinch Salt
1 Pinch Ground black pepper
4 Slices Swiss cheese
2 Tablespoons Grainy mustard
2 Tablespoons Apricot jam
4 Bun Pairs Sesame hamburger buns, split and toasted
1 Handful Spicy mix of microgreens

Instructions


  1.  Preheat the oven to 450˚ F.
  2.  Arrange the squash on the baking sheet and coat it with cooking spray.
  3.  Bake until the squash is golden for 25 minutes. Sprinkle with salt.
  4.  Combine the turkey, spinach, scallions, garlic, salt, and pepper in a bowl; mix well.
  5.  Form into four patties.
  6.  Heat a skillet over and lightly coat it with cooking spray.
  7.  Add the patties to the skillet and cook until browned, topping with a slice of Swiss cheese.
  8.  Spread the mustard and jam on both halves of the buns.
  9.  Serve the burgers on the buns and top with squash rounds, lettuce, and spicy microgreens.
