Vegan Stuffing

Ingredients


1 Tablespoon Olive oil
1 Pound Salmon, skinned, pin bones removed
1 Large Egg, beaten
1/4 Cup Bread crumbs
2 1/2 Teaspoons Sumac
1/4 Cup onion, finely diced
2 Teaspoons Fresh thyme, chopped
1 Pinch Sea Salt
1 Pinch Ground pepper
2 Teaspoons Lemon juice
3 Buns Brioche buns
1 Large Tomato, sliced
1/4 Cup Cilantro microgreens

Instructions


  1.  Heat a tablespoon of oil in a frying pan.
  2.  Dredge the salmon in the beaten egg and then in the breadcrumbs.
  3.  Cook the salmon for 4 minutes on the first side, then flip it over and cook it for an additional 2 minutes, or until it is barely pink in the center.
  4.  Combine the dressing ingredients and refrigerate until you are ready to use.
  5.  Top the brioche with tomato slices and cilantro microgreens and a drizzle of the dressing.
