Ingredients


2 Tablespoons Olive oil
6 Onzes Smoked salmon
1/4 Teaspoon Black pepper
8 Large Eggs
1 Handful Tarragon microgreens

Instructions


  1. In a skillet over moderate heat, heat the olive oil.
  2. Add the salmon and cook, stirring, for 3 minutes.
  3. In a mixing dish, whisk together the eggs and pepper.
  4. Add them to the skillet and cook, stirring gently, until cooked through, about 5 minutes.
  5. Serve, garnished with tarragon microgreens.
