3 Large Eggs
1 Matchstick cut Carrot
3 Diagonal Sliced Scallions
1 Handful Broccoli Microgreens
1/2 Cup Cooked Turkey
2 Teaspoons Safflower Oil
1 Pinch Low Sodium Salt

Instructions


  1. Heat oil in a wok or cast-iron skillet over moderate heat, until hot enough to sizzle a drop of water.
  2. Add broccoli microgreens and carrots, and stir fry for 2 minutes.
  3. Add cooked turkey, and stir fry for 1 minute until heated through.
  4. Add scallions and eggs, and scramble.
  5. Season with salt.
