4 Large Eggs
1 Tablespoon Parsley, Chopped
40 Grams Mustard Microgreens
4 Medium Radishes, sliced
2 Large Spring Onions, sliced
1 Pinch Salt
1 Pinch Pepper

Instructions


  1. In a bowl, whisk together the eggs and parsley until thoroughly incorporated; season with salt and pepper. Fry the spring onion, radishes, and microgreens in olive oil.
  2. Fry the omelet for 3 minutes after pouring the egg mixture over the vegetables.
  3. Flip the omelet and fry for another 2 minutes.
