Vegan Stuffing

Ingredients


1 Large Ripe avocado, peeled, pitted, and mashed
1 Large Sausage link, chopped
1 Pinch Himalayan Sea Salt
2 Slices Bread, toasted
1 Medium Lime
2 Teaspoons Hemp seeds
4 Normal Cherry tomatoes, cut in half
1 Handful Sunflower microgreens
2 Tablespoon Olive oil

Instructions


  1. Squeeze half a lime into the mashed avocado, season with salt and pepper, and combine with a fork.
  2. Heat ½ tablespoon olive oil in a pan. Add the sausage.
  3. Cook until gently browned, then remove from heat and put aside.
  4. Brush a little quantity of olive oil onto one side of each slice of bread before assembling.
  5. Divide the avocado mixture between two slices of bread.
  6. Add the tomatoes and sausage.
  7. Finish with a sprinkle of hemp seeds, a squeeze of lime juice, and sunflower microgreens.
